Today we used our friends car and drove just five miles to get to gorgeous redwoods. We visited this regional park in November and I was eager to return. It smells so good and fresh with the scent of bay laurel and redwoods.

This banana chocolate chip cake from the New York Times may be my greatest baking accomplishment. I used goat butter instead of cow (and a bit less too) and used coconut oil and parchment to prevent sticking to the pan as it baked. The recipe does not use any milk and came together easily with everything I had in my kitchen. It is fantastic.

This morning she made a construction paper chain and then for dessert this evening we had cake with candles. She loves talking about birthday parties and planning her next celebration. Today we embraced her ideas and let her have her fun. Having a five year old in the house is always unexpected but we make the most of it.
