I made a really yummy salad this week with red quinoa. I sauteed brussel sprouts and onions and added them to the quinoa with dried cranberries and golden raisins. I tossed the whole salad with a little vinaigrette dressing and served it with arugula. Emma really liked everything but the brussel sprouts. I did not give her very much arugula because she is picky with greens in her food but then she reached over and ate most of mine. I never can tell with that kid. But hey she eats well!
